I absolutely love making this EASY Mixed Berry Crisp! It is so light and refreshing.
I don’t know about you but I just love desserts where you can just toss everything together and let the oven do the rest. This is one of those recipes! It will only take you about 10 minutes to prep and then off to the oven it goes. When it comes to baking or cooking, less time prepping is a huge PLUS in my opinion.
This recipe is one of my brothers favorites. He is just like me when it comes to fruit desserts. We LOVE them! I always make him some kind of fruit dessert for his birthday and this year this one was it.
One thing we like to add to this dish are peaches (since we also both love peach cobblers so much)! Then we like to top the nice and warm Mixed Berry Crisp off with cold vanilla ice cream! The ice cream just melts on top of the crisp. Oh so darn good!
How To Make Easy Mixed Berry Crisp
First, gather all your ingredients.
FOR THE FRUIT FILLING:
- Butter or non-stick cooking spray, for greasing
- 1 & 1/2 pounds mixed berries (about 5 cups), such as blackberries, blueberries, raspberries, and/or strawberries
- 1/3 cup lightly packed brown sugar
- 1/4 cup all-purpose flour
FOR THE CRISP TOPPING:
- 1/3 cup all-purpose flour
- 1/3 cup pastry flour (or whole wheat pastry flour)
- 2/3 cup granulated sugar
- 3/4 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 1 large egg white
- 4 tablespoons (1/2 stick) unsalted butter, melted
- Optional: Vanilla ice cream or homemade sweet whipped cream (recipe below), for serving
FOR THE FRUIT FILLING:
Preheat the oven to 350°F degrees.
Lightly grease a 9-inch round or square glass or ceramic baking dish.
In a large bowl, combine berries, brown sugar, and flour and gently toss until evenly coated.
Transfer to the prepared baking dish.
FOR THE CRISP TOPPING:
In a large bowl, whisk together the all-purpose and pastry flours, sugar, baking powder, and salt.
Form a well in the center of the dry ingredients, add the egg white, and stir with a fork until the mixture becomes crumbly and has the consistency of bread crumbs.
Sprinkle the topping evenly over the fruit, drizzle the melted butter evenly over the entire surface, and bake until the topping is golden and crisp and the fruit is bubbling at the sides, about 35 to 40 minutes.
Cool slightly and serve warm or at room temperature, with vanilla ice cream or sweet whipped cream (recipe below), if desired.
Homemade Sweet Whipped Cream
INGREDIENTS:
- 1 cup heavy cream
- 3 tablespoons confectioners sugar
- 1/2 teaspoon pure vanilla extract
DIRECTIONS:
In the chilled bowl of a stand mixer fitted with the whisk attachment, or in a large bowl using a handheld mixer, whip the cream, confectioners sugar, and vanilla until soft peaks from, 2 minutes.
Cover and chill until ready to use.
Tips & Tricks
- You can add different fruits with the mixed berries. I like to add peaches or nectarines to mine.
- You can also use frozen berries, just allow them to thaw and drain any excess liquid.
- Store airtight in the refrigerator for up to 3 days. Reheat individual servings in the microwave, or the entire baking dish in a 350°F oven for 20 minutes, or until heated through.
- Use the whipped cream right away or keep it refrigerated in an airtight container for up to 2 to 3 days, or frozen up to 2 months. If keeping the whipped cream longer than 4 hours, you may want to briefly re-whisk before serving.
