These Molasses cookies might not be Santa’s favorite but they sure are mine (and maybe Mrs. Claus too)!!!
I love how soft and chewy these cookies are. I don’t just make these cookies once a year for the holidays, I make these cookies all year around per the request of multiple family members. Definitely a family favorite.
This might sound weird but I also like taking these cookies camping with us and replacing the graham crackers with molasses cookies to make S’mores! Hey, do not knock it until you try it! It is absolutely delicious!
How To Make Chewy Molasses Cookies
First, gather all your ingredients.
- 2 & 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon corn starch
- 1/4 teaspoon fine salt
- 1 & 1/2 teaspoons ground ginger
- 1 & 1/2 teaspoons ground cinnamon
- 1 teaspoon ground cloves
- 3/4 cup unsalted butter, softened
- 1/2 cup brown sugar, dark or light
- 1/2 cup granulated sugar
- 1 egg, room temperature
- 2 teaspoons pure vanilla extract
- 1/3 cup molasses
- Parchment paper or a silicone baking mat
Coating:
- 1/2 cup granulated sugar
This dough requires chilling. I like to chill mine overnight.
In a large bowl, whisk together the flour, baking soda, corn starch, salt, ginger, cinnamon, and cloves.
In the bowl of a stand mixer fitted with a paddle attachment or a large bowl with a handheld mixer, beat butter and sugars on medium-high speed until light and fluffy, 2 to 3 minutes.
Beat in egg until thoroughly combined.
Mix in vanilla and molasses.
Gradually add flour mixture to butter mixture, stirring just until combined.
Cover with plastic wrap or a sealed container and place in refrigerator for at least 2 hours or overnight.
Preheat oven to 350°F degrees. Line baking sheet with parchment paper or a silicone baking mat.
Use cookie scoop (or about 2 tablespoons of dough per cookie) to scoop out dough, form into a ball, and roll in sugar.
Place cookies on baking sheet.
Bake for 9 to 11 minutes being careful not to over bake.
Let cool for several minutes on the cookie sheet before moving to a wire rack.
Tips & Tricks
- Store in an airtight container for up to a week or freeze for up to 3 months.
- I prefer to chill my dough overnight in the refrigerator.
- Some of my favorite gadgets to bake with are the Solula Professional 18/8 Stainless Steel Medium Cookie Scoop I got from Amazon. I also love the LARGE baking pan I got from my favorite store Target Wilton Ultra Bake Professional. Lastly, I love using Amazon Basics Silicone Baking Mat instead of parchment paper. They are super easy to clean and they fit perfectly in your baking pan.
- For all-purpose flour I love using Bob’s Red Mill Gluten Free All Purpose Baking Flour. I first fell in love with this brand when I started eating healthy back in 2012, shortly after our twins were born. I first tried their Steel Cut Oats. Then when I had more time to bake I started using a lot of their other products such as, Almond Flour, Coconut Flour, Gluten Free Flour, Whole Wheat Flour, Pastry Flour, Bread Flour, and Xanthan Gum. - Since I bake quite often I like to buy stuff in bulk. I love buying my flour, sugars, pure vanilla extract, butter, oil, eggs, and spices at Costco.
